We make one soup.
That's the whole idea.

Boss and JP grew up outside Bangkok, spent years pulling night shifts in kitchens, and opened a walk-up window during COVID to survive. What started as Secret Congee became an obsession with one bowl — khao soi from Chiang Rai, the Northern Thai noodle soup they couldn't find anywhere in Seattle that tasted right.

In January 2025, they stripped the menu down to one dish. Classic curry broth, fresh wheat noodles, crispy noodle nest, house-made chili oil. The protein is the only variable. Everything else is locked in.
